Jill's Light and Luscious Coffee Cake


Combine the following dry ingredients: 
2 cups flour 
1/4 teaspoon nutmeg 
1 teaspoon cinnamon 
1 cup sugar 
1 teaspoon baking powder 
1 teaspoon baking soda 
1/2 teaspoon salt 

In a separate bowl, whisk together: 
1 egg 
1/2 cup vegetable oil (Jill uses canola oil and so do I) 
1 cup milk (Jill uses nonfat, I use 2% milk because it's what we have on hand) 
1/3 cup Tropicana orange juice, no pulp (I'm pretty generous with measuring this out!
2 teaspoons grated orange rind 

Add the liquid mixture to the dry ingredients and mix well. Pour the batter into a 9 x 13 pan that has been greased and floured. 

Prepare the topping: 
1 cup brown sugar 
1/2 stick of softened butter 
1 cup chopped nuts (Jill used toasted pecans, I used regular pecans) 

Squeeze the butter and blend with the other two ingredients by hand. (If you want to use a mixer, add the nuts afterward.) When thoroughly combined, sprinkle the topping evenly over the cake batter. Bake for 30 minutes at 350 F. (Test the center to make sure it's done.)

This is truly what a coffeecake should taste like -- cinnamonny and sweet (but not too sickly-sweet), with a crunchy topping and, thanks to the orange juice, an amazingly moist center. You can eat it all by itself, and it goes perfectly with a cup of coffee. If you want to get really indulgent, slice some bananas over it, squirt on some whipped cream, and pour some caramel sauce on top.

We have two faves for cooking with OJ....

Carrots or Yams with OJ and butter are one of those side dishes that never has any leftovers. The other is pan fried pork chops cooked in orange juice makes for a nice sauce with mash potatoes.

Orange Biscuits are a wonderful complement to chicken and other dishes. This is not an original recipe so I will leave the link but it is soooooo simple and tasty, I wanted to share it
2 cups Bisquick
2 teasp granted orange rind
2/3 cup orange juice
I then just continue as I would for making regular bisquick biscuits and bake at 425 degrees for about 12 minutes.( As a part of the original recipe, there are different instructions.)

My favorite summer-time drink I make with Tropicana Orange Juice is super easy and delicious!!


Scoop some Orange Sherbert into a blender, add some Tropicana Orange Juice, and blend!
Pour into glasses & enjoy!!
It's delicious and so refreshing on a hot day! .
You can also add a little Orange soda if you like. Both ways are delicious!

The first receipe that came to mind is "hard fruit" - it is a summer family tradition. Basically it is sliced fruit and OJ mixed and frozen. Then you let it thaw a bit break it up and eat like a hard slushy. ummmm

One way I use juice is in smoothies. I make smoothies all the time, especially in the summer with ice added. I love one I created last year. In the blender you add 14 ice cubes to two cups of OJ, then pile on the frozen organic berries (I used a bramble berry mix but any berries will do) and blend until smooth. It makes two 16 oz smoothies and its WONDERFUL!!!
